Healthy Burritos

Who can resist burritos? Not me! And with this delicious healthy alternative you don’t need to!

Every Sunday my family usually sit down and have a big meal together which in the winter is usually a roast, but during the summer months we opt for BBQ’s and more summery meals and last sunday this is what we enjoyed. These burritos are great for social meals as you can have this all prepped and arranged into pretty bowls before your friends arrive, just leaving you the job of heating your up wraps and then getting everyone to sit down and get stuck in.

These healthy burritos are filled with chicken, guacamole, spiced black beans, salsa and veg. I also replaced the typical heavy tortilla wraps with wraps made from brown rice from a brand called Mountain Bread which I picked up at Wholefoods, making it much more nutritious and light, while also not giving you the same bloated feeling as most shop-bought wraps. I was recommended these by a nutritionist and they are great!


Ingredients (Serves 4)


4 Chicken breast cut into strips

1 teaspoon of Paprika

1 Onion

1 tablespoon of coconut oil


2 large ripe avocados

1 tablespoon of extra virgin olive oil

The juice of one lime/the juice of half a lemon (I used lemon)

Spring onion/chives, chopped

1 clove of garlic, crushed

Red pepper salsa:

1 large red pepper, diced (you can use tomatoes if you prefer)

1 tablespoon of extra virgin olive oil

1 teaspoon of apple cider vinegar/balsamic vinegar

Optional: some chopped fresh parsley or coriander and a little fresh chilli

Spiced black beans:

2 x 400g tin of cooked black beans (I use Biona)

A pinch of ground cumin

A pinch of fresh chilli/a little cayenne pepper

1 clove of garlic, chopped

1 teaspoon of ghee/coconut oil

Extra fillings – pick and mix any of the below:

Large sliced tomatoes, or halved cherry tomatoes

Crunchy lettuce or red or white cabbage, shredded

Grated cheese

Finely-chopped Jalepenos or any chillis

Chopped cucumber

Lime wedges

Full fat sour cream

Sea salt/Pink himalian salt and black pepper to taste

Some fresh herbs: a handful of chopped coriander or parsley, spring onion/red onion/chives


  • Guacamole: Scoop out your avocado flesh into a bowl and using a fork roughly smash all your ingredients together and season.
  • Red pepper salsa: Chop everything up, mix together in a bowl and season.
  • Spiced black beans: Using a little ghee or coconut oil, gently fry 1 chopped clove of garlic, ½ teaspoon of cumin and the chilli for a few minutes. Then add your cooked black beans with a splash of water and cook them for about 8 minutes until they are sticky. Season to taste.
  • Chicken: Melt the coconut oil in a wok, once melted add the onions and begin to fry them. Then add your chicken, sprinkling over the paprika. Cook until the onions begin to caramelise and the chicken is cooked through.
  • All other fillings: Roughly chop or shred to your liking.

To serve

Pile up your fillings in pretty little bowls or arrange over a platter. Warm your tortillas wraps of choice in a pan or wrapped in tin foil the oven and bring out just before serving. Pile with chicken, black beans, guacamole and salsa, and then top with any other fillings you fancy. Roll it all up and start eating, making sure to keep a napkin close by- trust me!
